Super Chocolate Mountain Bars

This is an original recipe; great for breakfast or a bedtime snack! They are extra chocolatey and include fruit and nuts,(hence the “mountain”) Try these today – super easy to make!

Preheat the oven to 300 degrees and grease a small glass pan for thicker (cookie like) bars or a  cookie sheet for thinner granola like bars.

In a large bowl combine 2 handfuls of flour, pinch of salt, shake of cinnamon, pinch of baking soda and 2 generous shakes of cocoa powder.

Create a well in the center of your dry mix.

Add in 1/3 cup of melted butter, 2 handfuls of brown sugar, 2 generous splashes of vanilla and 2 large spoonfuls of Almond butter (or peanut butter if you prefer).

Mix together within the well and then add 2 eggs (ONE at a time), mixing in with the dry ingredients.

Once it is all combined add in 1 very large handful of oats, 1 handful of dried mixed fruit, 1 handful of dried cranberries, 1 large handful of sliced almonds, 1 handful of sunflower seeds and a generous helping of chocolate chips. Gently mix until just combined.

Pour into greased pan or sheet and bake for 30 minutes!
