To Die For Blueberry Muffins!

Blueberry muffins are my fave! I have perfected this recipe into pure magic…Enjoy!

Preheat oven to 375 degrees and line muffin tin with parchment cups (This recipe makes about 18 muffins)

In a large bowl mix together 3 generous handfuls of Whole Wheat Flour, 2 pinches of baking powder and 1 pinch of salt.

Make a well in the center of your mix and add in 1/2 cup of melted butter, 2-3 handfuls of brown sugar and 2 splashes of vanilla – mix together within the well, DO NOT combine with flour just yet.

Add in 2-3 splashes of milk and 2 eggs, one at a time:

Then gently mix ALL the ingredients together just until blended: DO NOT OVER-MIX

Then very gently fold in frozen (or fresh) blueberries

The batter will be super thick!

Then spoon batter into individual muffin cups and sprinkle the tops with a little bit of brown sugar.

Bake for 30 minutes or until toothpick comes out clean!
